2 c. water (warm)
1/2 c. pure maple syrup
2 t. salt
1/2 c. oil
1/4 c. Pure Florida Crystals (sugar)
1/2 c. raisins
1/2 c. applesauce
1/2 c. oatmeal (cooked)
4 c. white whole-wheat flour
2 T. active dry yeast
2 t. cinnamon
1 T. soy margarine
In large bowl, mix together, water, maple syrup, salt, oil, Florida Crystals, raisins, applesauce, oatmeal.
Add 1 cup flour, and mix for 1 minute.
Mix yeast with a little flour; stir into wet mixture.
Slowly add rest of flour until it makes soft dough that does not stick to your hands.
Knead dough 10-15 minutes; take dough out of bowl and place it on counter.
Cover with clean dishcloth; let rise until double in size.
Divide dough into 14 pieces; cover with towel.
Take one piece of dough at a time and roll out until flat.
Spread with a little soy margarine; sprinkle with cinnamon and Florida Crystals.
Roll up in a tight roll; turn ends under.
Place in a mini pan sprayed with vegetable spray; put in warm place until double in size.
Bake 20-25 minutes until golden brown at 350 deg. F.
Place bread on cooling rack; cover with smooth cloth.
Yield: 14 mini loaves of bread.
