Directions: Soak wheat in water for 35 to 40 minutes. While wheat is soaking, finely chop parsley, onion, cucumber, and tomatoes. In a large bowl, combine chopped vegetables, salt, mint, lemon juice, and olive oil. Drain wheat to be as dry as possible. Combine with vegetable mixture; stir well. Serve chilled. Serves: 8.
