Spicy Black Beans


1 T. olive oil
1/2 onion, diced
1/2 green bell pepper, chopped
3 cloves garlic, minced
1/4 t. basil
2 bay leaves, crushed
1/8 t. cumin
1 4 1/2-oz. can diced green chilis
3 15-oz. cans black beans


In a medium saucepan, heat oil to sauté onions, bell pepper, and garlic until crispy tender. Add seasonings, chilis, and beans. Heat on low to blend flavors. (Extending the time enhances the taste.) Serve over rice or as the main entrée. Serves: 8.
