Penne with Asparagus and Plum Tomatoes


Olive oil cooking spray
3/4 c. chopped onion
1/2 c. chopped yellow bell pepper
2 t. minced garlic
12 oz. fresh asparagus, cut into 1-inch pieces
3 T. water
2 c. seeded, chopped Italian plum tomatoes
8 oz. penne pasta, cooked according to package directions
3 T. finely chopped basil
Salt to taste


Spray large skillet with cooking spray, heat over medium heat until hot. Sauté onion, bell pepper and garlic until tender, about 5 minutes. Add asparagus and water. Cook covered until asparagus is crisp tender and water evaporated, 3 to 5 minutes.

Toss asparagus mixture, tomatoes, pasta and basil in serving bowl. Season to taste with salt.
Serves 4.
