Capellini Pomodoro


1 16-oz. pkg. Angel hair pasta (whole grain)
4 T. Olive oil (extra virgin)
3 cloves Fresh garlic (minced)
1/2 t. Red pepper (dried, crushed)
6 c. Fresh tomatoes (diced, may use grape tomatoes cut into thirds)
1 c. Fresh basil (coarsley chopped) (save small amount for garnish)
2 T. Fresh parsley (chopped)
to taste Salt


Cook angel hair pasta according to package directions. (Always cook in salted water.) Drain pasta; do not rinse. Put pasta into large serving bowl. In a large saucepan, heat 3 tablespoons olive oil (may use water); add garlic and crushed red pepper; saute 1-2 minutes. Add tomatoes, basil, and parsley; cook over medium heat 3-5 minutes. Pour over pasta; sprinkle salt to taste; drizzle with remaining 1 tablespoon olive oil. Toss together; garnish with additional fresh basil.

Yield: 24 1/2-cup servings.
