12-Minute Apple Cranberry Crumble

It only takes 12 minutes to make this delicious dessert—and that includes the time it takes to come to pressure.

Yield: 8 servings             

¼ cup coconut oil or vegan butter

6–8 apples, peeled, cored, and thinly sliced (6 cups)

½ cup dried cranberries

¹⁄³ cup water

¼ cup + 2 tablespoons granulated sugar, separated

1 teaspoon cinnamon

¼ teaspoon salt, separated

¾ cup old-fashioned rolled oats 

¼ cup oat flour or whole wheat pastry flour

¼ cup chopped pecans or walnuts

1 teaspoon vanilla extract

½ teaspoon cinnamon

• Place coconut oil or butter in pressure cooker. Select sauté, and heat until oil starts to melt. Select cancel, and allow coconut oil to finish melting with residual heat. Pour into small bowl and set aside.

• In pressure cooker, stir in apples, cranberries, water, 2 tablespoons sugar, cinnamon, and ¹⁄8 teaspoon salt. Spread in even layer.

• In small mixing bowl, stir together oats, flour, ¼ cup sugar, pecans, vanilla, cinnamon, and ¹⁄8 teaspoon salt. Stir in melted coconut oil, and mix well. Sprinkle oat mixture evenly over apples. 

• Lock lid in place, and close pressure release valve. Select pressure cook, and set for 1 minute. When cooking is completed, turn off cooker, and quick release the pressure. Carefully remove lid. Transfer to cooling rack. Let stand for 10 minutes. Serve warm.
