Green Rice with Spinach


1 1/2 T. canola oil
1 med. onion, diced
3 cloves garlic, minced
1 green bell pepper, seeded and diced
1 jalapeno pepper, seeded and minced
2 c. water
1 c. long brown rice
1 T. dried parsley
1/2 t. salt
2 c. chopped fresh spinach
2 T. minced fresh cilantro


In large saucepan, heat oil. Add onion, garlic, bell pepper, and jalapeno. Sauté for 5 to 7 minutes, until onions are tender. Add water, rice, parsley, salt. Cover.

Simmer over medium heat for 40 minutes. Stir in spinach and cilantro, and cook over low heat for about 5 more minutes, until rice is tender.

Serves 4
