Honey-Wheat Pizza Dough


4 c. Water (very warm)
2/3 c. Canola oil
1 T. Salt
2/3 c. Honey
1 c. Oatmeal (cooked)
1/2 c. Molasses
4 c. White-wheat flour
4 T. Yeast (active dry)
5 to 8 c. Whole-wheat flour


In a large mixing bowl, place warm water, oil, salt, honey, oatmeal, molasses, and 4 cups white-wheat flour. Mix together; add yeast. Continue adding whole-wheat flour until thick dough is formed. Place dough on floured countertop and knead 10-15 minutes until smooth and elastic. Spray mixing bowl with non-stick spray and place dough in bowll. Cover; let rise in warm place 20-30 minutes until double in size. Punch down; let rise again. When size of dough has doubled the second time; punch down; divide into 6 equal parts. Stretch 1 part dough onto round 14-inch pizza pan sprinkled with cornmeal. Place pizza toppings of choice on dough. Bake 400 deg. F. 15-20 minutes or until bottom of crust is golden. Serve hot.

Yields: 6 14-inch pizzas.
