Southwestern Salsa

Ingredients:

1 1/3 c. cantaloupe, finely chopped
1/2 c. jicama, peeled and finely chopped
1/3 c. red or green bell pepper, finely chopped
3 T. lime juice
4 t. red onion, finely chopped
1 T. snipped fresh cilantro
1 fresh serrano (mild) chili pepper, seeded and finely chopped
1/4 t. sugar (optional)
dash of salt

Directions:

In a medium mixing bowl combine cantaloupe, jicama, bell pepper, lime juice, red onion, cilantro, chili pepper, sugar (if desired), and salt. Cover and chill for 2 to 4 hours. Yield: 2 1/4 cups.
