Ingredients:
Dressing:
1 ripe medium tomato, chopped
1/4 c. fresh basil leaves
2 cloves garlic, chopped
1/4 t. salt
1 T. olive oil
4 c. elbow macaroni, cooked
1/2 c. carrot, shredded
1/2 c. red bell pepper, diced
1/2 c. scallions, sliced
2 T. parsley, fresh, chopped
Directions:
To make dressing: in food processor or blender, combine tomato, basil, garlic and salt, and process until almost pureed. Add oil and process until blended
In large bowl, combine rest of ingredients. Add dressing and toss to mix. Add additional salt to taste, if desired.
