Sizzling Sautéed Zucchini


olive oil
1 fresh zucchini
1 to 2 med. tomatoes
3 green onion sprigs
1 to 2 cloves garlic (pressed)
1/2 t. fresh basil
2 T. soy sauce
2 t. cornstarch
1/2 c. water


Over medium heat, sprinkle bottom of a skillet with olive oil until it’s just covered. Slice zucchini, tomatoes, and green onions. All at once, add vegetable mixture, garlic, and basil. Cook uncovered for 5 minutes. In a measuring cup, mix remaining ingredients and pour into the mixture. Cook for 2 to 3 minutes or until tender.
